Artistic Baker Creates Mesmerizing Cakes Covered in Glossy Mirror Glaze

A post shared by Ksenia Penkina (@ksenia.penkina) on

With a self-proclaimed “passion in patisserie,” culinary artist Ksenia Penkina crafts cakes that are as fun to stare at as they are to sample. While the Vancouver-based baker dabbles in all sorts of desserts, her mesmerizing mirror-glazed mousse cakes have proven to be her most popular pâtisserie.

Penkina creates her captivating mousse cakes in an assortment of sizes and styles. While they range from traditional tiered cakes to tiny, bundt-like treats, they all have one thing in common: a generous amount of glossy glaze. Often marbled and multi-colored, this gelatin-based coating is drizzled onto the spongy sweets with piping or pouring techniques, ensuring a one-of-a-kind cake each and every time.

In addition to their fascinating exteriors, each cake is layered with unique combinations that mix mousse with everything from biscuit and fruit to compote and cremeux. Still, due to their all-too familiar ring shape, many of her smaller confections are initially mistaken for donuts. After just one bite, however, the difference is clear!

You can follow all of Penkina’s “accurate, precise, and elegant” adventures in glazing on her Instagram page.
